This whale of a brew begins with a huge grain bill, consisting of American two-row malted barley. Plenty of the finest American-grown hops are then introduced at every stage of the brewing process. Massive additions of hops in the boil kettle produce a smooth yet assertive finish.
In a technique called hop-backing, the boiling wort is pumped over more fresh hops on its way to the fermenter - this lends huge hop flavor. Finally, the addition of whole cone hops into the conditioning tank imparts a hops-bursting-out-of-the-glass aroma, rounding out a complete hop sensory experience!

Inspired by the 19th century Austrian Brewer, Anton Dreher, the GSB Vienna Style Lager
is brewed true to form and perfectly conditioned for 6 weeks. After conditioning ceases,
we implement a process known as lagering, during which the beer is held at near-freezing
temperatures to bring out its smooth elegant toasty malt flavor. It's a tad darker than
your usual lager yet well balanced, giving you a savory enjoyable experience.

Marauder is not your ordinary scotch style ale. Consisting of a larger than life grain bill that starts with our base malt and roasted barley, we pack our mash tun full of an immense amount of crushed grains. Once the mash has completed we draw off a portion of the wort and begin a kettle caramelization process turning thisdark liquid into a syrup-like consistency to bring out the full, rich flavors of the malt. Once this process has been completed we add this syrup into the boil with the rest of wort and continue on with an intensely long boil to further concentrate the fermentable sugars. After a lengthy fermentation process, Marauder emerges with an alcohol content that will slay the masses. If that wasn't enough, this
beer escaped into hibernation inside oak barrels for 3 months where it soaked up the bourbon character of the oak. With one taste, Marauder will snare your senses with the full malt flavor, bourbon notes, and caramel sweetness. Don't even think about turning your back on Marauder...or you'll be sorry!

Conscious Sedaison is a traditional belgian style, farmhouse saison. After a lengthy fermentation process, we package this beer in the bottle, fasten it with a cork and cage and let it naturally condition. The belgian yeast creates spicy, peppery notes with a hint of tartness, culminating into a pleasantly dry finish. This saison is a labor of love for us here at the GSB. Not only is this our first bottle release but it has become one of our favorite styles brewed to date. We think you'll agree that after a long day you'll want to sit back, stare up at the stars and drink a glass of this well crafted beer that we call Conscious Sedaison.

Here at GSB, we are all fans of sour beers so naturally we've been eager to brew one of our own. Bayliner Weisse is our take on the traditional German Berliner Weisse style. Over 700 breweries in Germany used to make this beer and by the 19th century it was their most popular style of beer. By the late 20th century only two breweries in Berlin still produce these beers. This particular style is an unfiltered, sour wheat beer that comes in at about 3.6% alc/vol. It is a nice sessionable beer that can be enjoyed anytime of the year. Traditionally served with woodruff or raspberry syrup but it is most enjoyable when served on it's own.

Rick Sobotka knows a thing or two about putting you in a relaxed state. First, he's a board-certified Anesthesiologist. Second, he's a fourth-generation brewer and first-class beer connoisseur who's spent his life perfecting the recipes that come to you today as Great South Bay brews.
Born and raised in the small upstate New York town of Apalachin – best known by some as the site of a historic 1957 Mafia summit – Rick's earliest brewing memory is helping his dad crush malt with a rolling pin at age 12.
Speaking of dad, John Sobotka is something of a brewing legend in upstate New York. When Rick was a kid, his dad brewed beer on a regular basis. His craft-brewed porter won a devoted local audience as well as regional beer club awards. In fact, Rick's dad learned it all from his dad, who learned it from his dad – Rick's great-grandfather, Stanislaus Sobotka, who distilled his own whiskey back in Poland.
Continuing the family tradition, Rick started brewing at age 15 and crafting beer has been a front-burner hobby ever since. In college at SUNY Binghamton, he soon gained popularity by dishing out his renowned homebrew from a five-gallon bucket.
After college, Rick traveled the U.S., touring breweries along the way. This adventure grew his appreciation for craft beer and ultimately inspired him to consider brewing professionally. Settling for a while in San Diego, he worked as a brewmaster apprentice at the San Diego Brewery, dragging around sacks of malt and learning how great beer is made. Later, in Colorado, he served up pints from the beer tanks at Breckenridge Brewery.
When he landed back east to pursue medicine as a career, Rick still had beer on the brain. "Anesthesia is a career I really enjoy," Rick says. "But I always knew one day I would start my own brewery."
That real brewery is now Great South Bay Brewery. Rick's personal recipes for Bay brews reflect everything he's ever learned, and every beer he's ever tasted, over a lifetime of brewing. "I create beers that I enjoy drinking, and I'm quite particular when it comes to that," Rick says. "If you want quality and creativity in your beer, I know you'll choose a few of mine."
